Amberjack have earned the nickname reef donkey honestly. They are the hardest-pulling fish most anglers will hook on the Gulf or Atlantic wrecks, they live directly on top of structure they will absolutely take you into, and they never seem to stop.

Speed jigging is the technique. Unlike grouper — which want a slow flutter and a bait sitting still — amberjack are chasers. A narrow hydro-profile jig ripped hard and fast straight up through the water column is what triggers them, and it triggers them violently.

The tackle has to be honest about that. Heavy braid, a drag you can genuinely lock down, and heavy assist hooks at the head of the jig — a light assist cord gets straightened or sheared by a big AJ without slowing it down.

Expect to lose fish into the wreck. That is the fishery. The first ten seconds decide it, so do not give them line you did not have to.
